BAKED CARAMEL CORN
½ cup (125ml) maple syrup
1 cup (250ml) butter
2 cups (500ml) brown sugar
1 tsp (5 ml) salt
½ tsp (2ml) baking soda
1 tsp (5ml) vanilla
1 cup (250ml) unpopped corn
(to make 6 qts (6 L) popped corn)

Heat oven to 250º F. Put popped corn in lightly buttered bowl. Melt butter, add maple syrup, brown sugar and salt. Boil with out stirring for 5 minutes. Remove from heat. Stir in baking soda and vanilla. Pour gradually over popped corn and mix well. Turn into large roasting pan; bake for 1 hour, stirring every 15 minutes. Remove from oven and cool.
